Yet I am going to attempt to do just that: focus on several causes for celebration in one post, thus stuffing all of them into one huge perogi (that’s what a varenik is, Beautiful People). My answers:
- I find time for blogging when something is baking or simmering, between stirring, seasoning, and checking for doneness.
- I don’t have a blogging routine, but a morning routine – oh, definitely! Open one eye, hear loud high-pitched meowing, open the other eye, hear two more meowing voices join in, climb out of bed, proceed to the kitchen and dispense treats to the vocal trio. Then – blessed coffee time.
- I stay in shape (whatever that shape is!) by doing yoga, walking, bicycling, and catching gym time whenever I can. Swimming and kayaking are just fun times, rather than exercise; this is Florida, after all!
- I have always done volunteer work with a group that provides a very important service to the community, but I am not at liberty to name it.

It’s almost cake time, guys! Getting ready to slice and serve in a moment. Just a couple more: two lovely ladies, https://gastrogranny.com and dear Sophie of https://foodzesty.com thought that my blog deserved the Lovely Blog Award. I am sincerely mystified, since all you have to do is to look at their blogs, and you’ll see what’s truly lovely!
Finally – you guessed it! – with the music of the inimitable Stevie Wonder, The Sunshine Blogger Award graciously extended to me by a great blogger https://invisible-no-more.com. We can all benefit from her fighting spirit and her positive attitude!
Double chocolate coconut cake is coming up! Real quick, mix spelt or gluten free flour with coconut flakes, add a goodly amount of cocoa and a pinch of baking powder, gradually add coconut milk and whisked aquafaba or eggs. A pinch of salt is also helpful. Oh, and don’t forget to cream room temperature Smart Balance with brown sugar and dump it into the same bowl.
Pour batter into a lightly misted with oil baking pan, put it into the oven, and make the glaze by mixing a couple of tablespoons of coconut milk with a teaspoon of cocoa powder and a shot of rum. It’s party time, guys!
Glaze it the moment you take it out of the oven, while it is still hot, and sprinkle some more shredded coconut on top. Cool it, slice it, splash some chocolate syrup (or a lot of chocolate syrup!), garnish with fresh berries, and serve.
INGREDIENTS
- 3/4 Smart Balance, room temperature
- 3/4 cup coconut milk
- 1 1/2 cups brown sugar
- 1 1/2 cup aquafaba or 3 eggs,whisked
- 1/2 cup shredded coconut
- 1 3/4 cups spelt or gluten free flour
- 1 tsp baking powder
- 1/2 tsp salt
- 4 tablespoons coconut milk for glaze
- 1 teaspoon cocoa powder for glaze
- 1 shot (3 oz) rum for glaze
- 1 -2 tablespoons shredded coconut for sprinkling
PROCEDURE
- Heat oven to 350 F. Lightly mist baking pan with oil.
- Cream Smart Balance with brown sugar.
- Whisk aquafaba or eggs. Combine all ingredients, mix gently, but thoroughly.
- Bake for 1hour and 15 minutes or until toothpick inserted in the middle comes out clean.
- Remove from oven, make holes all over the top of the cake while it is still hot, pushing the skewer through to the bottom of the cake.
- Combine glaze ingredients, pour over surface of the cake, distributing evenly with a brush if needed. Sprinkle with shredded coconut.
- Let cool before slicing, serve garnished.

OK, here are my answers:
1. Why did you start blogging? ~ It was supposed to be a way to keep me mentally occupied when I retired, but evolved into that plus a cagt blog once I got a cat for companionship after I retired. That cat died, I got another, and he died. Then I was offered Andy and Dougy, two smoke Persian kitties by a person who raised pedigree cats who knew I’d lost the second cat.
2. How do you find time for your blog? ~ I get up very early because the kitty boys think I should and I spoiled them rotten from early kittenhood. No one bothers me at 1:30 AM (except the kitty boys)! Of course, I am retired, too.
3. Do you have a blogging routine/schedule? ~ I try to complete one or more posts early in the morning. Of course, the kitty boys need to do something – anything! – so I have content to write about.
4. How long does it take you to finish writing a post? ~ Highly variable. It might be five minutes, or it could take half an hour or more, depending on the number of photos to process, technical problems with WordPress or my laptop. Sometimes, too, I don’t have anything that I find interesting enough to post about. My readers expect a little humor, a little cat photography, a little bit about the interactions between the kitty boys, who are brothers from the same litter.
5. Do you have a morning routine? ~ Yes. Feed the kitty boys, make breakfast, create my blog post or posts for the day, catch up on the news on television, then catch up with comments on my blog posts.
6. What is your favorite autobiography? ~ I generally prefer histories and the works of writers such as Harry Mulisch, Naguib Mahfoux (the correct key doesn’t work on my laptop, but is the last on =e in the alphabet…), Cees Nooteboom and Carlos Fuentes, all of whom, unfortunately, are dead
7. How many languages do you speak? ~ English fluently, Ger,man imperfectly, and can make my way through (with minimal comprehension) French, Spanish, and a few others. That said, I only claim one – English.
8. What does it mean to be a woman? ~ Since I’m not one, I can’t say!
9. Is your blog listed on your resume/linked-in page? ~ Yes, if I understand the question.
10. How do you stay in shape? ~ Walking mostly. Health issues limit me to tenderfoot level exercise.
11. Are you doing any volunteer work, if so what kind and why? ~ I’ve done volunteer work at the two local history museums, one devoted to the characters who settled the county (and they were genuine characters!) and the other devoted to military history featuring local people who’ve served in any American war. I had to drop back on this because of time conflicts with scheduled dialysis. I intend to find that time again because I enjoy history and help[ing staff local museums with their limited budgets. I’ve also driven veterans to VA facilities, though that definitely is more difficult to do because of the dialysis.

Questions :
#2 I make time to write. I am often sitting in my corner at St. Arbucks at 6:30 AM. Then I get it into the computer after lunch. I try to stay 2 to 3 weeks ahead so I can work on my fiction projects.
#4 I can usually knock it out in an hour or so. Typing it up also serves as rewrite and editing. Typos still sneak through
#7 I took Spanish in school ages ago along with Arabic and French. I picked up a bit of Cantonese living in San Francisco…just enough to get into trouble. That’s true about all of my languages including English.
#11 Not lately. I used to record “talking books ” for the Library of Congress and the State Dept.
P.S. I know nothing about what it’s like to be a woman. My wife agrees.
