Fight That Scale With Stuffed Sweet Potatoes!

I am on a mission: my husband has been issued guidelines for a very strict diet that targets very specific weight loss goals. I am now counting every ingredient that could possibly be counted, including lentils in a bowl of soup (if you are curious about my Super Soup, click here), and keeping a Food Log, to be presented to the doctors (in plural!) at the end of the month.

That’s a pretty accurate image of my husband at the doctors’ office. Luckily, I have come across a great recipe that totally fills the bill and cleverly combines all my husband’s favorite ingredients. Don’t let the chicken in its title mislead you; the recipe is wonderfully versatile and could easily be made vegan or vegetarian by using meat substitute of your choice or extra firm tofu. To inspire my husband not to skip his prescribed 30-minute-a-day walk, I have scrolled through what Youtube labels “walking fitness music” and  – lo and behold! – discovered an entire line up of his favorite songs at the time when he was a slender college student. He really was – I have photos to prove it! Not that his weight or his corpulence matter to me; what truly matters is his health, of course.

Inspired by Abba, Rolling Stones, and Bob Dylan, as well as some great foodie bloggers out there, my husband will, with G-d’s help, eventually scale down to weight and shape satisfactory to his doctors!

    1. It’s not my picture, although I actually just made it. I don’t even have any other potatoes, but sweet ones; they are so much less hypoglycemic. Thank you for stopping by, dear friend.
