Meatless Monday – Easy Vegetable Tart

Do you have a go to dish that you whip up when you don’t know what to make for dinner?  Well, this vegetable tart is mine. In fact, I made this last night when I realized I needed to get something on the table. It is easier than it looks and no precooking is required!  This tart is a delicious combination of eggplant, zucchini and fresh tomatoes arranged in a spiral pattern interspersed with fresh mozzarella. Just bake in a hot oven for about an hour until the mozzarella is golden and bubbling.  Every time I make this tart, it looks different.  This time I used red, red/orange marbled and yellow heirloom tomatoes for a more colorful look.       1. Take your time – they’ll be there. Enjoy every second of your time away. But I can relate, playing catch-up after only a single weekend off.

        I made myself a sort of vegetable stew using this recipe as my inspiration that was quite good, so I can well imagine that a crustless souffle would be possible – and yummie.

As we only had about two hours of sleep last night, I’ll probably crash the moment I get home tonight, then teach a morning class tomorrow with my eyes partially closed, then come home and start getting into my regular routine.

    Even a meat-loving chef likes to have 1-2 days a week eating a vegetarian dinner. I love vegetarian risotto or roasted root vegetables drizzled with a reduced balsamic dressing and honey roasted pecan nuts.

    1. Thank you for your kind comment. In fact, even though we are not vegetarian, I love vegetarian dishes, and we usually end up having meat only once a week, while the rest of the week is meatless. You can get the idea by browsing through my recipes; most of them are vegetarian and vegan.
