Dairy Free Irish Cream

I am not up to creating an original post yet, although one is definitely cooking (or baking, rather!), but, since today is a National Chocolate Milkshake Day, I am wondering if a rum-based non-dairy chocolate Irish Cream is considered milkshake. What do you think, Beautiful People?

Do you believe in the luck o’ the Irish? My son, whose company headquarters are in Dublin, goes to Ireland pretty often. He assures me that the more you drink, the luckier you feel, if the drink is good, that is!

Following this logic, I should be the luckiest person in the world because I love Irish Cream Liqueur, but it’s dairy, so I can’t have it. Fortunately, I am still the luckiest person in the world because my husband has created a dairy free version of Irish Cream. Moreover, he made sure to flavor it with both coffee and chocolate – what more can you want?

My husband has a magic hand with drinks. He makes this one, and he has shared this recipe with me. Instead of cream, he uses a combination of coconut milk and non-dairy pareve coffee creamer. Since I much prefer rum to other strong liquors…

    1. You can make it dairy, darling, if you want; I just can’t have dairy, so I have to use plant-based milk substitutes for everything.

  5. National MILKSHAKE Day??? How did I miss that on my September calendar – lol. And yes, I think this recipe counts as a grown-up milkshake (despite the fact that it contains no milk). 🙂

    I caught it the first time, so now I need to check to see if it is printed out and in my recipe box. I have a friend for whom this would be a perfect holiday gift – my thought when I first tripped across it! Thanks for the reminder.

    1. Dear Joelle, I thank you so much for your concern – I am truly touched! We are staying with friends because we have no power, but the kitties are at home, guarding the house. We sat out the hurricane at home, and only left on Monday, when it became clear that restoring power will take some time. Kitties don’t need air conditioning; I think they are even enjoying the heat. We haven’t had any damage, thank G-d. My husband stops by the house every day to take care of the cats and make sure everything is in order, 😻

      2. M husband is working, and I am having an unexpected vacation as college is closed at least until Monday.
        Fortunately, we usually deplete the freezer by Sunday. Anything that was still there we packed with us and enjoyed it together with our friends.
