Crabless Crab Cakes

A few days ago, a wonderful chef Ronit Penso of Tasty Eats posted a recipe for Corn and Shrimp Cakes. They looked so appetizing that I was tempted to make them right away. There was only one problem: all shellfish is not kosher. Dolly I had no idea shellfish isn’t kosher. His finished product looks likes potato latkes! Haha. The recipe sounds delicious. My father was a commercial fisherman for many years and my great grandmother made the best potato pancakes ( the secret was used using day old mashed potatoes). What do use as the crab substitute?
