I’d love to know more about “Chop Suey Cake” or Easy Pineapple Cake” https://melhopkins.com/2017/04/15/easy-pineapple-cake/ some bloggers indicate it dates back to World War II when the U.S. had sugar and fat rationing. Do you have any info? It’s one of my favorite dessert recipes.

Dear MelI don’t know anything about “Chop Suey Cake” but now I am curious and will research. As to the Easy or Short (that’s a literal translation from Chinese) Pineapple cake, your legend is correct in that it has to do with the beginning of WWII. The rest of it is wrong, though, and logically, how would a cake that contains butter and sugar be based on food rationing? In fact, it is a traditional Chinese wedding and funeral cake that should have 6 ingredients, including pineapple. There is a symbolic meaning to each ingredient, as well as to the entire cake. Apparently, Americans picked it up in Taipei where the US had a consulate up until 1941. It was closed when Japan joined the war. Wait till I make and post the “upside down” version, and I’ll tell more.
