Dear Beautiful People, I am cheating! I don’t have a step-by-step set of photographs of this crazy creation because I’ll assemble it tomorrow, right before serving. All I have is my cranberry sauce, ready for tomorrow. However, I promised a recipe for Cranberry Pizza, so here it is, in case you want to spend a few minutes to surprise your guests. It is really easy.
INGREDIENTS
- 2 ripe mangoes
- 1 cup cranberry sauce
- 1/2 cup non-dairy whipped cream
- Blueberries to garnish
PROCEDURE
- Make cranberry sauce the consistency of pizza sauce. If using store bought sauce, add a shot of rum and bring to boil. Simmer until thickens. Stir occasionally. Let cool off.
- Peel and slice mangoes, arrange on serving platter. This is your pizza crust.
- Spread cranberry sauce on top of mango slices. This is your tomato sauce.
- Spread non-dairy whipped cream on top of cranberry sauce. This is your cheese.
- Throw blueberries on top. They are your olives.
- Use your imagination and dazzle your guests.

That’s brilliant! Quite simple (which I love, I hardly ever make something time-consuming now) but innovative in its simplicity. I love mangoes and cranberries, so this is definitely something I’ll try! Thank you 🙂

Good for you! However, I only used mangoes because they are in season now. You can use any yellow fruit, like peaches, maybe. The idea is to create an appearance of pizza.

You can make it with anything you want, as long as the appearance of a pizza pie is kept. I never had a chance to take a picture of the finished product – my husband grabbed a portion before I grabbed the phone to take a picture. He claimed “quality control”!

They are having a wonderful time. I thought that they would be bored of each other, but they are not. Unfortunately, Yaffa feels left out and wants her own play-date. It is a bit of a struggle to balance both their needs.

What a super alternative (or addition, in my case) to pumpkin pie!
I use a recipe for cranberry sauce I modified from The Vegetarian Epicure (and even people who don’t usually like cranberry sauce say it’s great). It includes mandarin oranges, so not as quite as tart as other cranberry sauce recipes – but it also has a touch of mustard, so it’s not really sweet either. I think it would be yummie used for this purpose.
By why wait for Thanksgiving?

I spent a moment watching and listening to a delightful pianist from the streets of Paris, posted on his blog. Although my taste generally runs more to jazz than classical, she was WELL worth the time I spent listening. I adore acoustic piano.
The man I mention on your pumpkin pie post was a jazz pianist of some note, btw. I fell in love with his music first. He was a prodigy as a child. His greatest disappointment was the day he realized, as a very young child, that he would never become the jazz Mozart! Seriously. I believe he now teaches at a university somewhere. We lost touch when I was forced to leave NYC and he married a woman he met subsequently who wasn’t pleased to have us communicate, even online.

I am sorry, I was running out of time so couldn’t answer until now. I love jazz, even though my training was in classical music, and it remains my first love. But I am quite eclectic in that my music tastes run a very wide spectrum, from opera to heavy metal rock, emphatically excluding pop.

With difficulties. There is usually someone in the family who keeps them in line, and they manage to drive that “someone” nuts! I just keep my husband out of the kitchen and proceed without listening until I light my candles. Then I take a deep breath and ask, “What did you want to tell me?” By that time he has already forgotten, so everything is fine.

Thank you, sweetheart! There is no dairy cream in my recipe (most of my recipes are non-dairy). I use coconut cream for this one as cashew nut will be too heavy which will interfere with the illusion of pizza. Also, I wanted a fruity taste, rather than a nutty flavor. Feel free to try other variations, though – be daring! 😻
